Homemade Iskender Kebab Ingredients
To prepare a delicious Iskender Kebab at home, you will need the following ingredients:
- 400 g of beef (preferably tenderloin for the best texture)
- 2 tablespoons of olive oil
- 2 tablespoons of butter
- Salt (to taste)
- Black Pepper (to taste)
For the sauce:
- 1 tablespoon of olive oil
- 1 tablespoon of butter
- 200 ml of tomato puree
- 1 cup of hot water
- Salt (to taste)
For serving:
- Turkish pide (pita) (lightly toasted)
- 2 tablespoons of butter (for drizzling)
- 4 green peppers (for garnish)
- 2 tomatoes (sliced for garnish)
For frying:
- Sunflower oil (for frying the ingredients)
For the topping:
- Yogurt (preferably plain for a refreshing taste)
- 1 tablespoon of butter (melted for drizzling)
How to Make Homemade Iskender Kebab
- Begin by wrapping the beef tenderloin in cling film and placing it in the freezer for about 1 to 1.5 hours. This step will firm up the meat, making it easier to slice thinly. Once it is firm, remove it from the freezer and prepare your ingredients.
- Using a sharp knife, cut the beef into thin, leaf-shaped slices. In a non-stick saucepan, add the sliced meat and cook it over medium heat with the lid on. Allow it to cook undisturbed until the meat releases its juices and then reabsorbs them. Once cooked, add the olive oil and butter, then sauté until the meat is nicely browned. Season with salt and black pepper, then remove from heat.
- To prepare the sauce, heat the olive oil and butter in a separate saucepan. Stir in the tomato puree and hot water, bringing the mixture to a boil. Once boiling, add salt to taste, mix well, and then take it off the heat.
- To assemble the dish, place lightly fried Turkish pide (pita) on a serving plate. Generously pour the prepared tomato sauce over the pita, then add the sautéed meat on top. Melt the additional butter and drizzle it over the meat for added flavor.
